Chicken Tikka Masala

This from my cookbook I got from Ethan.

Ingredients

1 Onion
2 inch piece of ginger
3 cloves garlic
1-1/2 lbs chicken
1 TBLS Garam Masala spice
1/2 tsp turmeric
1 tsp cumin
2 tsp

paprika

2 tsp salt
3 TBLS canola oil
1 TBLS tomato paste
1 TBLS brown sugar
1 (28 oz) can crushed tomatoes
3/4 C heavy cream
small bunch cilantro
  Rice of Flatbread

Preparation

  1. Peel onion, cut and dice add to medium bowl
  2. Peel ginger, grate 2 teaspoons and to onion
  3. Smash & Peel garlic & add to onion

  4. Cut chicken into 1" pieces & put in a different bowl
  5. add garam masala, turmeric, cumin, paprika and salt to chicken
  6. stir & coat with spices
  7. heat oil in pot over medium heat
  8. add onion, ginger & garlic & 1 tsp salt.
  9. cook until onions are soft, stirring occasionally (7 - 9 min)
  10. Add tomato paste, brown sugar, & chicken
  11. Cook 5 minutes
  12. Add crushed tomatoes, stir well scraping bottom of pot.
  13. Bring to boil
  14. reduce heat to low & cover
  15. simmer for 10 minutes
  16. turn off heat
  17. stir cream into sauce
  18. Mince cilantro & sprinkle on finished dished plate.
  19. Serve with Rice or Flatbread (naan)
